I fit the symptoms for PCOS but I have normal hormone levels...wtf?

Have you seen a reproductive endocrinologist? They are both gynecologists and endocrinologists and are more likely to have experience than the doc you saw. You may not be needing more info about this disease, it may just be you need a better doctor. Also, has the doctor tested to see if you have insulin insensitivity? Also, you may want to go at a different point in your menstrual cycle (if you cycle enough that you can tell where you are in the cycle), since you may have different hormone values then. Like it might be normal part of the time, but abnormal at other times, and you just need to have blood tests during the abnormal time.
